Your best option is to use a high temp header coating. Using pipe rap on a bike is a waste of money and time. If you ever ride it in any real weather water will make it wet and rust the pipes much faster. Also the wrap will over time fall apart and look like heck. Header rap is only good on race/show only bikes and under hoods of cars. If money is not an issue ceramic coating is the best.

Nice job! That looks fantastic! My vote for seat color is something that's close to the darker gray that tops the tank and tail. It would make the stripe on top look continuous from front to back. But if you go with any one of your contrasting color schemes I agree the grips should be that color too. I think any one of them will look good.
 
I like it. You could even do piping or stitching like you show on the seat corner that carries the pinstripe line through from the tank to the tail. That would be a classy look in my opinion.
