I don't really want to run as is, or put full mufflers back on this bike. Eventually i'd like to chop the seat as well and make it cafe. Anyone have any ideas on what i could do for the bike as a whole, or especially the exhaust? What exhaust parts would make this bike look mean? thanks.

Maybe a bit shorter and/ or tilted up a bit more than on Hornix excellent cafe build:
