I've never owned a chain driven bike before so I'm not sure if this is normal or not, but when I'm cruising off the throttle then barely touch the throttle its like it jerks forward a bit not smooth.

It's not jerky at all except from no throttle. At first I thought maybe the chain was loose, so I tightened it to spec and it helped a little. Is this just the feeling of going from engine braking to not?

To better explain I'll be cruising at like 30mph, 3k rpms, no throttle, it starts to slow down so I give it the slightest touch on throttle just to maintain speed and itll jerk a bit.

Normal or? Clutch works flawlessly and so do all gears, tons of power.

Am I riding it wrong? Should I never go no throttle? It's annoying in traffic.

Check for swing arm play and rear wheel bearing play. Make sure all bolts for wheel/sprockets, motor, swing arm are torqued to spec. The 81-82 sohc bikes have more motor movement than the earlier bikes because of the different setup motor mounts. (rubber lower rear and a deleted upper rear. This was to help with vibes in the bike) These bikes will have more of a "twitch" than a solid mounted motor 77-80 sohc.
