Everything can be tested on the bike. Resistance tests are in the Haynes manual, available for download in The Garage section of the forum.
I highly recommend reading through it before tearing into the bike any further.
I'd have recommended leaving everything on the bike unless it failed the resistance tests in-place.

If the stator and field coil pass the tests there's no need for additional other testing of those components.

There's no test for the rotor. It's just a big hunk of iron. Visually inspect it. If there's no visible damage leave it in place.
 
There is the razor blade test. Generally with the field coil installed on the bike and with the "Yamaha" cover installed, with the ignition turned on the magnetic field from the field coil should be strong enough to hold a razor blade against the cover.
I suppose it could be done off the bike with a battery.
