Starter clutch assembly

I need to know if my 73 tx500 rotor,starter clutch and large gear will interchange with my 78 xs500 yamaha

I am guessing you mean XS400. Yamaha didn't make a 500.

Looks like both use the same Clutch Assembly 341-15580-07-00.

But also, it looks like nothing else will interchange.

Yamaha certainly did produce an XS500. Model years 1975-1978, prior to that it was known as the TX500.

The TX500 shares the same clutch housing as the 75 XS500 which shares the same part # for the whole clutch unit as the 75-78 starter clutch so I would guess they are likely all compatible but can't say for sure.
