When the engine is cold the valves might be making a good seal, but once the metal warms up it can actually cause the valves to stay open slightly resulting in low compression.     low idle with revs hanging

    Hanging revs usually indicates that the bike is running lean. Definitely get the exhaust fixed up, but in the mean time you may be able to compensate for the lean idle by turning your pilot jet out 1/2 turn or so.

    Problems with two up touring on my 250

    Your plugs look quite good, if you were running lean they would be white and charred. I'd check your float height, its possible that when you are cruising at 100kph its gets starved for fuel because the floats are set to high.
