Aftermarket handlebar controls?

How difficult is wiring new aftermarket controls on an "81 XS400SH?

I don't know much about wiring. The only experience I have is putting new radios in four different cars in the past year. Would this be any different?

Can I use any kind of aftermarket controls? Or do they need to be Yamaha specific parts?

controls are just buttons and switches, no other dodah's in there!

Agreed! If you can read and understand wiring diagrams, it isn't too difficult.

Take pictures and label everything as you disassemble and you should be fine.

How about the little sensors on the brake/clutch handles? Are they important?

I don't have them on mine, only the brake switch.

you can use a hydraulic brake switch built into the brake banjo for that. the clutch you can just bypass the switch.
