BTW If you are looking for a project in the future I have seen some really nice CX cafe's

I'd Ride it for quite a while and do some research before tackling a project like this though... and that bike may be too pretty to chop up (if there is such a thing )

Hey Guys, so I've ended up purchasing the CX500, and it runs great! There are a few minor mechanical things I'll have to look at eventually (sometimes skips from 2nd into neutral if accelerating fast, squeal on rear drum brake when you really reef on it, jet carbs during the winter for the spring). Overall it was a great purchase, and I'll check the age of the tires to see if those need replacing (they still have a ton of tread, but might be older, I'll check the numbers on the side to see).
