Won't idle after high speed

Every time I ride to work on the interstate for thirty miles, when I get off the exit the bike wants to die if I don't father the throttle, If I let it sit ten mins it's fine when I start it up again, I can ride all day in town and this won't happen? :wtf:
 
I would do a sync, idle mixture adjustment and idle rpm adjustment, and check that the choke disengages completely. Sounds like a temperature thing. How cold is it still over there? And how fast do you go on the interstate? If it's freezing and you're going 60, the bike doesn't warm up the way it does in town.
 
It's been in the sixties here, I go about 70mph, my choke is missing the balls or whatever holds it open, so I have to stand there and hold it open. I notice when revving the engine the choke knob moves in and out.
