Going to be putting in all new clutch plates, and putting on new fork seals. Not sure what the torques are for any of the bolts. Not sure if it is SOHC or DOHC. How can I tell what it is?

DOHC. The manuals are in a sticky thread, 3rd post. They are for the Seca, but will be 95% correct for your Maxim. The torques are all listed in the appendices.
