I'm sorry for the large amount of questions. I've done my researching - I swear I can't find anything. Would a 1978 cylinder head (jugs up) fit onto a 1980 block? (Jugs/ pistons down)?? I just wanna b sure and check if anyone knew. Thanks!

Perfect.

One more question before I pull the trigger on buying a head. Are the fins going to be the same from a 1978 XS400 to a 1980 XS400S? Here's the ebay link to the one i'm thinking about.

Super clean inside and he says to be good working condition which means good valves to me. What do you guys think, and will the fins line up?

The fins wont line up but it don't matter. I have seen motors with square heads on newer curved cylinders. The gaskets line up the same. Yamaha stopped making the square style motor in 78 (here in the U.S.):)
