My 81 runs at 5,000 rpm going 55 mph. That appears to be right in the middle of the power band and has decent torque for acceleration and passing. I did not change any of the sprockets so it is just how I got it.
55 to 65 mph is about where she is happy. I have done some long trips where I was forced to do closer to 75 mph for long periods of time and it was not fun. The bike handled it fine, but the vibrations are significant.
I run 60mph most of the time. All the bikes turn 4800 rpm at this speed. The bikes with 18-1.85 rims and 110/90 tires have 16-37 sprockets. The 82 has a 2.15-16 rim and 120/90 tire and 17-37 sprocket.
