The foot pegs were already silver powder, so I scuffed them and powdered over them.

There are rubber seals around the shafts that hold the butterfly valves. They break-down, letting air leak in and throw off the mixture. It's been the cause of more than a few members tuning issues.

Pine sol can also damage them.
Removing the two screws in each shaft will allow the butterfly plate to slide out, then the spring assembly on each shaft can be taken apart and the shafts slid out of place.

Make sure to remove the needle jets also. In your pic you still have them in the carbs.
Also I see your float valve seats where still in there.
Needle nose pliers and pull straight out.
Held in by an old o-ring so they may be a little hard to pull out.
Looks good. The only thing I noticed is the weave's are 90* off compared to one another one those side panels.
